The global mushroom market is showing a gradual recovery in demand following a challenging summer, although trends remain mixed across regions. According to FreshPlaza, sales have improved in several European countries since the beginning of autumn, while producers continue to face rising operating costs, labor shortages, and changing consumer preferences.

In Ukraine, demand for exotic mushroom varieties is increasing despite higher production costs and electricity supply disruptions. Ukrainian producers report that the quality of locally grown mushrooms often exceeds the standards of European competitors. The main export destinations remain the Czech Republic, Germany, the Netherlands, and Belgium. Despite difficult operating conditions, producers have managed to maintain stable operations.

In Poland, the mushroom industry continues to consolidate due to high automation costs and labor shortages. Over the past 20 years, the number of mushroom farms has declined from around 3,000 to fewer than 500. Nevertheless, Poland remains one of Europe’s leading mushroom exporters. In 2025, Polish producers exported more than 246 thsd tons of mushrooms worth €564 mln.

In the Netherlands, growers are counting on stronger seasonal demand ahead of Christmas to help offset losses from previous months. Italy recorded strong mushroom sales in October despite rising production costs. Meanwhile, the German market continues to face challenges due to inflationary pressure and changing consumption habits among younger consumers.

Despite improving demand in several markets, the European mushroom industry continues to face high costs and structural changes. Future sales trends will largely depend on seasonal demand toward the end of the year, while producers remain focused on improving production efficiency and maintaining competitiveness.
