Israel expects record wheat harvest thanks to favorable rainfall

Israel is expected to harvest a record 140,000 tons of wheat in the 2026 season, marking the largest crop in the country’s history. According to the Ministry of Agriculture and Food Security, production will surpass the previous record of 126,000 tons and stand nearly 55% above the long-term average.

The record harvest is largely attributed to an exceptionally well-distributed rainfall pattern throughout the growing season. Rainfall arrived at regular intervals during autumn and spring, creating ideal conditions for crop development. The Negev Desert, where around 70% of Israel’s wheat is grown, received about 450 mm of rainfall, supporting strong plant establishment and high grain quality.

The ministry noted that this year’s crop is distinguished not only by its high yield but also by excellent quality. As a result, a larger share of the wheat will qualify for Israel’s strategic food reserves, whereas in a typical year part of the harvest would only be suitable for animal feed.

Yuval Lipkin, head of the Food Security Administration at Israel’s Ministry of Agriculture, said wheat is one of the country’s most strategic crops. He noted that the record harvest would significantly strengthen Israel’s food security amid growing global risks and increasingly fragile supply chains.

Experts also highlighted the advantage of Israel’s hot and dry summers, which allow wheat to dry naturally without costly artificial drying. This improves long-term storage conditions and enhances the country’s preparedness for potential disruptions to future food supplies.
