Ukrainians consume more vegetables per capita

The countries with the highest per capita consumption of vegetables in 2024 were Ukraine (653 kg per person), China (486 kg per person) and Turkey (353 kg per person).

This is reported in the IndexBox study “World – Vegetables – Market Analysis, Forecast, Size, Trends and Insights”.

The products with the highest consumption in 2024 were potatoes (380 million tons), fresh vegetables, other (296 million tons) and tomatoes (189 million tons), with a combined share of 57% of global consumption.

Onions, cucumbers and gherkins, cabbage and other cabbage, eggplant, mushrooms and truffles, carrots and turnips, chilies and peppers, spinach, lettuce and chicory, garlic, cauliflower and broccoli, green beans, peas, asparagus, leeks and other bulbous and pulses vegetables were slightly behind, accounting for another 43%.

From 2013 to 2024, spinach recorded the largest growth (with a CAGR of +3.4%), while consumption of other products grew more modestly. In terms of value, the largest vegetable types in terms of market size were fresh vegetables ($331.3 billion), tomatoes ($184.9 billion) and potatoes ($139.6 billion), with a total share of 48% of the global market. Mushrooms and truffles, cucumbers and gherkins, eggplant, spinach, onions, cabbage and other cabbage, chilies and peppers, green beans, peas, lettuce and chicory, garlic, cauliflower and broccoli, asparagus, carrots and turnips, leeks and other bulbous and leguminous vegetables were slightly behind, accounting for another 52%. Cucumbers and gherkins, with a CAGR of +5.7%, demonstrated the highest growth rate in market size among the main consumed products during the period under review, while the market for other products grew more moderately.
