4 trends are shaping the global mushroom market
The global mushroom industry is experiencing a period of rapid cost growth, labor shortages, and the active introduction of harvesting robots. Mushroom Growing News representative Inna Ustilovska identified four key trends in the sector in 2026: business consolidation and consolidation, growing consumption of exotic mushrooms, increasing share of organic cultivation, and increasing demand for local products. In addition, demand for ready-made mushroom mixtures and packaged products is growing in many countries.

“Harvesting is a sore point all over the world. In developed countries, such as Ireland or the United Kingdom, the main problem is the lack of personnel due to hard monotonous work and a complex visa system. In India or Uzbekistan, farmers complain more about the unstable quality of the substrate and lack of knowledge, but even there, young people no longer want to engage in harvesting,” Inna Ustilovska noted.
The world leader in mushroom production remains China, where 44.20 million tons are grown annually, including 1.45 million tons of champignons, and the most popular species is shiitake. Japan is in second place with 434,590 thousand tons. The number of producers in Japan has decreased to 7 thousand compared to 21 thousand in 2023 due to the aging of farmers and high production costs. The USA is in third place, where 362 thousand tons of mushrooms are harvested per year, with 60% of production concentrated in the state of Pennsylvania. In Europe, the largest suppliers are Poland with a volume of 334,00 thousand tons and the Netherlands, where 225,00 thousand tons of mushrooms are grown annually. Currently, experts call India, Turkey, as well as the countries of the Middle East and Africa, promising markets that are developing rapidly due to modernization and state support.
