Trend of Edamame soybeans has reached Europe

Edamame beans, or rather unripe soybeans, are widely used in East Asian cuisine, but this trend has already reached Europe. Currently, this type of soybeans is highly valued around the world for its taste and health benefits.
This was stated by Olena Sobko, a representative of Bio Vegio, during the roundtable discussion “Roadmap for Soybean Growing”.
She explained that to create the Asian superfood, soybeans of “milk ripeness” are harvested. Then they are closed in jars to create a healthy dish.
“In Europe, there are 4 listed varieties of Edamame soybeans, but they are not yet listed in the State Register of Plant Varieties suitable for distribution in Ukraine. So if we are talking about such a product as soybeans in a jar, I want to warn Ukrainian producers: ordinary soybeans are not suitable for this. It is not of the right size and does not have the right sugar content, because Edamame does not care about protein or oil content, but rather about sugar content,” said Olena Sobko.
